Last week, we talked about the importance of self-care. This week I want to make sure you are actually doing it! Here is an article that gives you 13 ways to practice self-care every day. Which ones do you already do? Which one will you try? I’m thinking either buying myself flowers or connecting with a friend. These Baked Chicken Thighs are one of my go to recipes. It’s quick and only has 6 ingredients. You mix up the sauce, pour over the chicken and bake. Serve with some veggies, maybe some zoodles (see below) and enjoy! Maple Dijon Baked Chicken Thighs
My book recommendation this week is Heft by Liz Moore. I read it along time ago and have recommended it to many people over the years. It is the story of two improbable heroes whose connection transforms both their lives. It is a memorable, heartbreaking, and ultimately redemptive novel about finding sustenance and friendship in the most surprising places. Heft by Liz Moore
One of my favorite kitchen products is my Spiralizer. I use it to make zoodles, noodles made from zucchini. Since I’m allergic to gluten, zoodles are a great substitute for pasta. But I think even if I could eat pasta, I’d eat zoodles anyways. It’s healthier and a great way to get more veggies into my diet. You can also make “noodles” out of carrots and sweet potatoes.
